My friend Crystal and Clear Health

Over the years I have slowly come to understand the importance of a healthy lifestyle.  I have a dear friend who has shed a lot of light on what has to be done in order to become and stay healthy.  Crystal and I have been friends for over 20 years and I trust her with my life!  What she has done for me has been priceless! 

About 4 years ago I had a pulmonary embolism (multiple blood clots in my lungs) and I had to go on a blood thinning medication called Coumadin.  I am so grateful there is medication out there that can assist in the disengration of blood clots, but this medication really messed up my body.  In fact I still don't feel normal, but at least I don't feel horrible any more. 

During the six months I had to be on this medicine, plus the six months after I got off of it, I felt terrible.  My body felt very foreign to me... I got migraines nearly every day, I was sick to my stomach, I started gaining weight, my skin looked horrible and I just felt miserable.  I wasn't sleeping very well and I also began to have panic attacks. 

About a year after I had been off this medicine I went to see Crystal for a bio-energetic scan.  I wish I had gone sooner.  She helped me sort out my body signals and got me on a natural remedy of vitamins.  I followed her remedy and began to feel like myself again. 

Not much later I was "trying" to get pregnant and was not succeeding.  So I went to see Crystal again.  Once again she put me on a schedule of vitamins and certain natural remedies and within a few months I not only had lost 10 pounds but I was pregnant.  I was OVERJOYED!!  Now I have an 8 month old baby and I feel better than I have in a long time.

Haystacks/Italian Chicken

This is one of my absolute favorite meals.  It is NOT the healthiest meal as you will see in a moment, but it is so delicious that it is something I break down and make at least once a month... LOVE IT!

HAYSTACKS

5-7 chicken breasts
1/2 cube butter
1/2 bottle of Italian dressing (large bottle)
1 can cream of chicken soup
8 oz. cream cheese

In crock pot combine chicken, soup, butter and dressing. Cook 4-5 hours until it falls apart.  Cut up into small pieces (I do this right in the crock pot because it literally falls apart, but you can take the chicken out and do it too). Return to crock pot if the chicken has been removed.  Add cream cheese, make sure it is completely mixed with the italian dressing and butter.  Cook for 20 minutes more.  Serve over rice.

Lasagna

For my first post I wanted to share one of my favorite lasagna recipes.  I like it because it is very kid friendly and since I don't like a lot of items added to my lasagna it is very ME friendly!

LASAGNA

Cook over medium or low heat...
1/2-1 lb hamburger or chicken browned (season w/ salt and pepper)
Drain grease from pan
ADD:
8 oz. tomato sauce
8 oz. cream cheese
8 oz. cottage cheese
6 oz. sour cream
Season w/ garlic powder or Creole or w/ just salt and pepper (whatever is preferred)

Boil noodles until soft (usually around 15-20 minutes)

Layer of noodles
Layer of sauce
Layer of noodles
Layer of sauce
ETC until pan is filled
Top w/ cheeses of choice - I usually do the mexican mix cheese and mozarella, but whatever is preferred in your house.

Cook at 350 degrees for 25-35 minutes.  If you freeze these they will need to cook for at least 45 minutes. 

SERVE UP THE YUMMINESS!!  DON'T FORGET THE GARLIC BREAD!
